Macaroni Salad with an Indonesian Flavor

Ingredients

  • 3-4 oz. white cabbage
  • cucumber
  • 3 oz. whole wheat macaroni, cooked, drained, and cooled
  • 2-3 tsp roasted peanuts
  • 1 tbsp peanut butter
  • 2 tbsp soy milk
  • 1 tsp soy sauce
  • 1 tsp lemon juice
  • tsp garlic salt
  • ¼ tsp powdered ginger
  • ¼ tsp raw sugar
  • few drops Tabasco sauce

Method

1. Grate the cabbage coarsely. Dice the cucumber finely.
2. Place the macaroni, cabbage, cucumber, and peanuts in a bowl.
3. Put the remainder of the ingredients into the liquidizer and blend well.
4. Pour the peanut butter dressing over the ingredients in the bowl and mix thoroughly before serving.
