Macaroni Au Gratin


  • 1 recipe tofu mixture from Savoury Mushroom Bake, (see Savoury Mushroom Bake)
  • 2 tbsp water
  • 2 tsp tomato paste
  • 2 tbsp nutritional yeast
  • 3 oz. whole wheat macaroni
  • ½ cup whole wheat bread crumbs
  • 1-2 tsp Earth Balance Natural Buttery Spread


1. If you do not have the tofu mixture already prepared then turn to Savoury Mushroom Bake for the recipe. Turn the mixture into a bowl; add the water, tomato paste, and 1 tbsp of yeast, and stir.

2. Add the cooked macaroni to the bowl and mix thoroughly. Turn the mixture into a greased oven dish; top with the breadcrumbs, remainig tablespoon of yeast, and margarin. Bake at 350 for about half an hour. Accompany with a mixed green salad.
