Lazy Man Stir Fry

Ingredients

  • ½ box angel hair pasta
  • 2 ounces tofu, extra firm
  • 1 package frozen mixed vegetables
  • 1 tablespoon soy sauce, low sodium
  • 4 tablespoons stir fry sauce
  • 2 teaspoons minced garlic
  • cookin spray

Method

1. Put some water up to boil for the angel hair.
2. Slice the two slices of tofu in half lengthwise, and then cut each half in half again. Cut the strips into 1/2” cubes.
3. Spray a non-stick stir fry pan with Pam. Let the pan heat up over medium high heat. Add the garlic and keep it moving with a wooden spoon until it starts to get brown.
4. Add the tofu to the pan. Sprinkle a few shakes of soy sauce over the tofu and keep it moving over the heat until a brown crust starts to form over the surface of the tofu.
5. Pour in the frozen veggies and keep tossing everything over high heat.
6. By now, the water should be boiling. Add the angel hair and stir it so it doesn’t stick to itself. Set a 3 minutes timer for the pasta.
7. Keep stir frying the veggies and tofu. Add in 4 tbsp. of the Mr. Yoshida and remove the stir fry pan from heat. Stir the veggies and tofu around so they soak up the sauce.
8. When the pasta is finished cooking, drain it, and then add it to the pan with the tofu and veggies. Make sure the noodles get coated in sauce. Divide into 2 equal portions and serve hot.
