Lamb or Beef Stew

Ingredients

  • 4 medium onions, peeled and quartered
  • 2 tbsp finely chopped ginger root
  • 2 tbsp ground coriander
  • ¼ tsp red pepper
  • 3 cups plain yogurt
  • 1 tbsp salt
  • 4 tbsp cooking oil
  • 4 cloves peeled, crushed garlic
  • 1 tbsp ground cumin
  • 2 tsp ground cardamom
  • 1 tbsp garam masala
  • (combine the above ingredients for marinade)
  • 3 lbs lean boneless lamb or beef

Method

Place the meat in a large bowl and cover with marinade. Marinate for at least 2 hours. Move the meat to a heavy-bottomed pan. Place the pan over medium-low heat and gently bring contents to boil. Cook for about 2-2 1/2 hours, until tender. Add milk as cooking proceeds if meat sticks to pan. Serve with white rice and a salad. Serves 4-6.
