  • 1 pound Morningstar Farms recipe crumbles
  • ½ cup onion, chopped
  • 4 tbsp Penzey's Taco Seasoning
  • ¾ cup water
  • 4 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • ¼ cup milk
  • 1 cup cheddar cheese, shredded


Boil the potatoes for 20 minutes until tender and mashable; use potato masher or electric mixer to mash potatoes with milk and butter. Set mashed potatoes aside.

Saute the onion in Pam until soft, then add the crumbles and heat them through. Add the taco seasoning and stir for a few moments to season the crumbles. Then add the water and stir. Let the crumbles simmer over low heat for 10 minutes.

Put the seasoned crumbles in the bottom of an 8x8 casserole dish that has been sprayed with Pam. Layer the cheese on top of the crumbles. Frost the top of the thing with mashed potatoes. Heat at 350 until mildly bubbly-about 20 minutes.
