Indian Rice


  • 1 small onion
  • 1 garlic clove
  • ¼" piece ginger root
  • 1 tbsp vegetable oil
  • ½ tsp cumin
  • ¼ tsp coriander
  • ½ tsp turmeric
  • ½ tsp garam masala
  • 1 pinch chili powder
  • ¼ pound tomatoes
  • 1 small carrot
  • ½ small red pepper
  • cup peas
  • 2 tbsp water
  • ½ cup brown rice, cooked
  • sea salt, to taste


1. Chop the onion finely. Mince the garlic and ginger. Heat the oil in a pan and saute the onion, garlic, and ginger for 2-3 minutes.
2. Add the spices to the pan and stir briefly.
3. Chop the tomatoes, carrot, and red pepper. Add them to the saucepan along with the peas. Stir well for a minute or two. Add the water, bring to the boil then lower heat, cover pan and leave to simmer for about 5 minutes.
4. Stir in the cooked rice and add salt to taste. Continue cooking in covered pan for about 5 minutes longer, stirring once or twice, before dishing up.
