Hash Brown Crust Pizza


  • 3 cups fat free hash browns
  • 2 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • 3 tablespoons shredded Parmesan or Asiago cheese
  • 3 ounces part-skim mozzarella cheese
  • ½ cup fat free pasta sauce
  • 3 medium egg whites, or 1/4 cup from carton
  • 1 cup mushrooms, sliced thinly
  • ½ red onion, thinly sliced
  • 1 small zucchini sliced into thin coins
  • 6 ounces spinach, baby spinach if possible.
  • a few sliced black olives
  • one large or 2 small tomatoes, chunked
  • 2 Morningstar Farms Breakfast Patties


You'll need a pizza stone or a cookie sheet at least 10" wide
Preheat oven to 350.

Thaw hashbrowns and mix with eggwhites, flour and olive oil. Pat into an even 10" round on the stone or cookie sheet which has been prepared with a little olive oil spray.Bake for about 30 minutes until set and edges are browning.
Thaw, chop up and saute sausage substitute in olive oil spray. Add mushrooms, zucchini, olives, onions, tomato chunks and spinach. Set aside
Grate mozerella and set aside
Turn oven onto broil.
Assemble pizza: sauce, cheese, sausage substitute, vegetables and a little shredded parmesan for the top. Put under broiler until cheese is melted and bubbly.
