Gluten Free Oven Chicken Cutlets

Ingredients

  • 1 pkg thinly sliced chicken breasts, rinsed and patted dry
  • 1 egg, lightly beaten with a tsp of water or cream
  • 4 slices Food for Life Gluten Free Rice Almond Bread, toasted dark, and pulverized into crumbs
  • ¼ cup parmesan cheese, grated finely
  • 1 tsp Penzey's Mural of Flavor Seasoning
  • 1 tsp Penzey's Pasta Sprinkle
  • ½ tsp sea salt
  • ¼ tsp pepper

Method

Preheat oven to 350.

In a shallow dish, beat the egg and water or cream until homogeneous.

In another shallow dish, mix breadcrumbs, parmesan cheese, seasonings, salt and pepper.

Dredge the chicken pieces first in egg, then roll in crumb mixture to coat.

Bake on a foil lined cookie sheet for 10-15 minutes or until the chicken is cooked through.
