Ginger Beef


  • 2 inch piece ginger root, peeled
  • 4 cloves garlic, peeled
  • 3 tbsp oyster sauce
  • 3 tbsp soy sauce
  • 1 tsp sugar
  • 1 tbsp dry sherry
  • ½ lb beef, round steak or other lean cut of beef, sliced as thinly as possible; if it's frozen and only slightly thawed, this is made much easier
  • 1 bunch broccoli, with flowerets cut off, stem peeled and sliced
  • ½ lb fresh mushrooms, cleaned and thinly sliced
  • 1 tbsp sesame oil
  • 2 tbsp oil, or more as needed
  • 1 bunch scallions, sliced in 1" pieces


Place sliced beef in 1 tbsp soy sauce and sesame oil and allow to marinate for 3 or 4 hours. In a food processor, combine garlic and ginger. Process completely and set aside. Combine oyster sauce, soy sauce, sugar and sherry and set aside. Heat cooking oil in a wok. Quickly stir fry broccoli pieces, remove and drain. Stir fry mushroom slices. Remove and drain. Add more oil if necessary and quickly stir fry beef slices. Remove and drain. Add garlic-ginger mixture and quickly stir fry (1 minute). Add oyster sauce mixture and stir. Add beef slices, stirring constantly. Add broccoli and mushroom slices, stirring until warmed. Garnish with scallion slices and serve immediately.
