German Potato Salad

Ingredients

  • 6-8 slices bacon, cooked and diced
  • 6 medium sized potatoes, unprepared
  • 1 onion, finely chopped
  • 1 tsp salt
  • tsp pepper
  • 1 tsp dry mustard
  • ¼ cup sugar
  • ½ cup water
  • ¼ to ½ cup vinegar
  • 1 egg, slightly beaten

Method

Cook bacon until crisp, reserving drippings. Cook the potatoes until tender; remove the skins while hot and slice. Combine the bacon, potatoes, and onion. To the bacon drippings and salt, pepper, dry mustard, sugar, water, vinegar and beaten egg. Cook the mixture only until the egg thickens; pour it over the bacon-potato mixture and heat until the liquid is absorbed. Garnish if desired, with onion rings and additional bacon. Yield 6-8 servings.
