Dee's Vegan Bran Muffins

Ingredients

  • 2 cups All Bran
  • 2 cups low fat soy milk
  • 1 T. white vinegar
  • ¼ cup molasses
  • ½ cup applesauce
  • 2 tablespoons oil
  • ½ cup turbinado or brown sugar
  • 1 egg
  • 1 mashed banana (optional)
  • 1 ¾ cup unbleached white flour
  • ½ cup wheat bran
  • ¼ cup ground flax seed (optional)
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • ½ cup chopped walnuts, pecans, or almonds
  • 1 cup raisins, craizins, chopped dried apricots, or blueberries

Method

Makes 12 muffins
2-Points each

Mix together and let sit 20 minutes:
2 cups All Bran
2 cups low fat soy milk
1 T. white vinegar

In a separate bowl combine:
1/4 cup molasses
1/2 cup applesauce
2 T oil
1/2 cup turbinado or brown sugar
1 egg - I use Ener-G Egg Replacer (www.ener-g.com)
1 mashed banana (optional)

Combine in another bowl:
1 3/4 cup unbleached white flour
1/2 cup wheat bran
1/4 cup ground flax seed (optional)
1 tsp salt
2 tsp baking soda

Have ready:
1/2 cup chopped walnuts, pecans, or almonds
1 cup raisins, craizins, chopped dried apricots, or blueberries :)

Add the wet mixture to the soaked-bran bowl. Combine thoroughly. Add the dry mixture to the bowl. When the dry ingredients are almost fully incorporated, add the nuts. Finish combining. Fold in raisins or other fruit. Cover and refrigerate at least over night as long as 2 days.

To bake: Preheat oven to 400 degrees. Lightly mist muffin tins or use paper wrappers. Fill the tins almost entirely full- this recipe is fairly dense. Bake 20 minutes.

Notes

Makes 12 muffins, 2 points per muffin.
