Cucumber and Tomato Salad

Ingredients

  • 1 red onion
  • 3 medium cucumbers
  • 2 medium tomatoes
  • 1 tbsp cumin
  • 3 tbsp chopped cilantro
  • tablespoon chopped red bell pepper
  • 1-2 tsp lemon juice

Method

Chop onion. Peel and slice cucumbers. Remove seeds. Chop into small cubes (1/4 inch). Chop tomatoes into cubes of equal size. In a food processor, blend together fresh cilantro, cumin, pepper, and lemon juice. Combine onion, cucumber, and tomatoes. Dress with cilantro mixture. Allow to chill before serving. Makes 4 servings.
