Crispy Eggplant Rounds


  • 1 medium eggplant, peeled and sliced
  • 1 large egg, beaten slightly
  • 1 cup italian bread crumbs
  • ½ cup grated parmesan cheese
  • 1 tablespoon Penzey's sicilian seasoning


Preheat oven to 375. Line a cookie sheet with foil. Spray with Pam. Dredge eggplant slices first in egg, then in mixture of crumbs, cheese, and seasoning. Lay slices on cookie sheets and spray them with Pam. Bake 20 minutes and turn slices over. Bake another 15-20 minutes until crisp.
