Creole Chicken In the Crock Pot

Ingredients

  • 3 large chicken breasts
  • 1 can diced tomatoes
  • 1 can tomato paste
  • 1 chopped bell pepper
  • 1 chopped onion
  • chopped ham
  • diced sausage
  • Tabasco sauce to taste

Method

Throw it all in the crock and cook on low 4-5 hours. I thickened it a little at the end with cornstarch. I served it over brown rice. The ham gave it really good flavor. We really liked it.

Notes

The person who submitted this recipe subsituted the chicken breasts for the thighs originally called for in the recipe. In place of the tomato paste, she added 1 can of Rotel (drained). She used one thick slice of chopped ham. She left the sausage out. She also left out the Tabasco sauce.
