Comfort Pie


  • 2 serving fat free hash browns
  • 1 cup cooked frozen mashed butternut squash
  • 2 teaspoons butter
  • 10 ounces chopped frozen spinach
  • cup 2% reduced-fat cottage cheese
  • 1 tablespoon shredded Parmesan cheese
  • ¼ small onion(s)
  • 2 cups Morningstar Farms Frozen Burger Style Recipe Crumbles


(I usually make this when I have leftover winter squash to use up. If you are starting from scratch, cut a small butternut squash in half, scoop out seeds and bake face down in a Pyrex baking dish with a little water, covered tightly with foil for about 35-45 minutes, depending on how big the squash it, until soft to the touch. Mash 1 cup of squash with butter, using a potato masher.) Let cool.

To make the "creamed spinach":simmer a 10 oz block of frozen spinach in a little water, covered until cooked. Drain and reserve cooking water.Place spinach into blender with cottage cheese and parmesan. Season with a little garlic powder, salt and either white or black pepper. A little nutmeg is good here too.Add 1/4 cup or so cooking water and blend until smooth and creamy
Set aside.

Thaw 2 cups of fat free hashbrowns. I like Alexia and Cascadian Farms. Alexia are already seasoned. I add salt and pepper to the Cascadian farms.
Spray a 9" pie tin with some Canola oil spray and pat hash browns into bottom of pan and as far up the sides as you can get them to go. Bake for 20 minutes in a 350 degree oven, or until the potatoes start getting golden brown.Remove from oven and set aside.

Chop 1/4 onion and saute very slowly in oil spray until it starts getting translucent. Raise heat and brown ground beef substitute. If using cooked beans, just flip for a minute with onions, season as you like and remove from heat.

Take the pie tin of hash browns and spread meat substitute or beans in the bottom. Cover with creamed spinach.

Take cooled, mashed squash and roll between two sheets of waxed paper until you get a circle that is about 6" diameter. Remove top piece of paper and carefully flip over onto top of pie. Gently peel off second sheet of waxed paper.Bake in 350 degree oven for 20 minutes, until it's all hot and bubbly. This is GREAT comfort food for a low price in WW points or fat/calories if you count that way.
