Chicken and Yellow Rice

Ingredients

  • 2 boned and skinned chicken breasts
  • 1 package small yellow rice mix
  • ½ medium onion, chopped
  • 2 ribs celery, chopped
  • 1 can cream of celery soup
  • ½ cup toasted almonds, slivered

Method

1) Bake two boneless, skinless chicken breasts wrapped in aluminum
foil for an hour at 350°. Let them cool. Cut them into small cubes
(1/2 ").
(2) Cook one small package of yellow rice along with its spices. One
of the Latino companies makes this.
(3) Chop a couple of ribs of celery and some onion and saute them in a
little olive oil.
(4) Mix the chicken, rice, sauted veggies and a can of cream of celery
soup together and pour into a casserole dish sprayed with Pam.
(5) Sprinkle the top with slivered almonds.

Bake at 350° for 30 minutes. The almonds will brown and the edges of
the casserole with bubble a little.
