Cheese Fondue

Ingredients

  • 8 oz. Emmenthal (Swiss) Cheese
  • 8 oz. Gruyere
  • 2 ½ tbsp flour
  • 1 ½ cups dry white wine
  • 1 large clove , garlic
  • fresh ground black pepper

Method

Rub clay fondue pan with garlic. Dust cheese with flour. Heat wine until almost boiling and then add cheese slowly, stirring constantly. The mixture should become thick and smooth. The Swiss say to use a wooden spoon and stir in a circle-eight pattern. For a sharper tasting fondue, use all Gruyere cheese. Garnish with pepper.
