Carodan Farm Pumpkin Coffee Cake

Ingredients

  • ½ cup shortening
  • 1 cup sugar
  • 1 cup pumpkin
  • 2 eggs, beaten
  • 1 tsp vanilla
  • 2 cups flour
  • 2 tsp baking powder
  • ½ tsp soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp ginger
  • ¼ tsp nutmeg
  • ¼ cup brown sugar
  • ¼ cup white sugar
  • ¼ cup quick oats
  • 3 tbsp butter
  • nuts, optional
  • 1 shakes cinnamon

Method

Mix together shortening, 1 c. sugar, pumpkin, eggs, vanilla.

Mix flour, baking powder, soda, salt, cinnamon, ginger, nutmeg and add to above mixture.

Make streusel topping from brown sugar, remaining white sugar, oats, butter, nuts (optional), and a shake of cinnamon.

Pour half the batter into a 9" round pan. Add 1/2 cup applesauce and half of streusel on top. Bake at 350 degrees for 50-55 minutes.
