Butter Bean and Vegetable Stew

Ingredients

  • ½ cup brown rice
  • 1 small leek
  • 1 tbsp vegetable oil
  • 1 cup mushrooms
  • ½ small red pepper
  • 1 bay leaf
  • cup vegetable broth
  • 7 oz. lima beans
  • 1 tbsp peanut butter
  • soy sauce, to taste

Method

1. Cook the rice until tender.
2. Clean the leek well and chop it finely. Saute in the oil for 2-3 minutes.
3. Slice the mushrooms. Chop the red pepper finely. Add them to the pan and saute for a further 2 minutes. Add the bay leaf and the broth; bring to the boil, then lower heat, cover pan and simmer for 5-7 minutes.
4. Drain and rinse the beans.
5. Add the peanut butter to the vegetables in the pan and mix well. Add the beans, taste for seasoning, and add soy sauce. Continue simmering gently until the beans are thoroughly heated; remove bay leaf and serve over the rice.
