Breakfast Hash


  • 3 cups peeled, cubed potatoes
  • 1 tbsp sunflower oil
  • 1 red bell pepper, seeded, halved, and sliced
  • 1 green bell pepper, seeded, halved and sliced
  • 2 tomatoes, diced
  • 1 ½ cups open cap mushrooms, peeled, quartered
  • 2 tbsp fresh chopped parsley
  • ground black pepper, to taste


Cook the potatoes in boiling water for 7 minutes, drain well. Heat the sunflower oil in a large skillet, add the potatoes and cook for 10 minutes, stirring. Chop the red and green bell peppers and add to the skillet with the tomatoes and mushrooms. Cook for 5 minutes, stirring constantly, add the chopped parsley, season to taste, and serve.
