Blueberry Bread


  • 6 egg replacers (9 tsp. powder with 12 Tbsp. water)
  • 4 c. sugar
  • 3 c. soymilk
  • 1 tablespoon ½ cinnamon
  • 8 c. flour
  • 10 teaspoons baking powder
  • 2 pt. fresh or frozen blueberries


1. mix egg replacers with sugar
2. add soymilk and mix
3. mix dry ingredients separately
4. add dry ingredients into wet mixtures, stirring in slowly
5. fold blueberries into mix
6. grease and flour 4 bread pans
7. bake at 350 for 1 hour (add 15 mins for frozen blueberries)
8. bread is done when it is golden brown and bounces back up when pushed in center
