Ingredients

  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 10 ounce pkg frozen spinach, thawed
  • 1 15 ounce can tomatoes, drained
  • 1 15 ounce can chickpeas, drained
  • 1 cup fat free cottage cheese
  • 1 tsp Penzey's Pasta Sprinkle
  • 1 cup brown rice, cooked

Method

Saute onion in Pam until soft and starting to brown. Add the garlic and keep it moving. Add the spinach, tomatoes, balsamic vinegar, and drained chickpeas. Stew everything down until the most of the liquid has cooked out. Stir in the Penzey's Pasta Sprinkle and cooked rice. Top with cottage cheese and serve. No, there's really nothing you can do to make it look more appetizing, but it tastes good! I swear!
