Beef Barbecue


  • 2 ½-3 pound chuck roast
  • 1 large onion, chopped
  • 4 tbsp brown sugar
  • 2 tsp paprika
  • 1 ½ tsp salt
  • 2 tsp dry mustard
  • ½ tsp chili powder
  • ¼ tsp cayenne pepper
  • 4 tbsp worcestershire sauce
  • ¼ cup vinegar
  • 2 ½ cups tomato juice
  • ½ cup ketchup


Place all ingredients in covered roaster. Bake for 4 hours at 325 degrees or until tender. Remove meat; shred meat with two forks. Store in refrigerator overnight. Remove solidified fat from top. Warm in a saucepan over low heat. Serve in sandwich buns. Makes 12-15 sandwiches.
