Balkan Stew


  • 1 small onion
  • 1 small green pepper
  • 1 small sweet red pepper
  • 4 ½ teaspoons canola oil
  • 1 clove garlic clove
  • 2 small tomatoes
  • ½ small raw eggplant
  • teaspoon sea salt
  • teaspoon cayenne pepper
  • 3 tablespoons water
  • ½ cup cooked brown rice


Slice the onion and peppers thinly. Saute them in the oil in a saucepan for about 3 minutes. Mince the garlic. Chop the tomates. Dice the eggplant. Add them to the pan and cook for a couple of minutes longer. Add the seasoning and then the water. Bring to the boil, then lower heat. Cover pan and simmer for about 5 minutes. Stir in the cooked rice and cook, covered, for about 5 minutes longer.
