Artichoke Fritadas

Ingredients

  • 2 cans artichoke hearts
  • 4-5 pieces whole wheat bread, cubed
  • fresh parsley
  • 1 medium onion, chopped
  • salt and pepper
  • 9 eggs
  • ½ cup parmesan cheese

Method

Heat artichokes in water until tender. Chop other ingredients and artichokes together. Stir in eggs, salt and pepper. Drop little pats of mixture into hot oil and fry until brown and crisp on one side. Turn them over and fry until they are brown and crisp on the other side. Drain on paper towels. Serve hot or cold. Makes about 12 fritadas.
