Apple Pie a la Daniel (gluten free version)

Ingredients

  • 1 box Whole Foods Gluten Free Pie Crust, thawed
  • 2 ½ pounds apples, peeled, cored and sliced 1/4" thick
  • ¾ cup sugar
  • 2 ½ tbsp Bob's Red Mill Gluten-Free All Purpose Flour Mix
  • 1 tbsp orange juice
  • ½ tsp ground cinnamon
  • tsp nutmeg
  • ¼ tsp salt
  • 2 tbsp butter, cut into small pieces
  • 1 recipe Streusel I, for topping

Method

Preheat oven to 325.

Place sliced apples in glass dish with 2 tbsp water and cover with Press N Seal. Microwave for 5 minutes.

Combine microwaved apples, 3/4 cup sugar, flour, orange juice, cinnamon, nutmeg, salt and let stand for 15 minutes, stirring several times, so that the apples soften slightly and will better fit into the crust.

Pour the filling mixture into the bottom crust and gently level with the back of a spoon. Dot the top of the filling with the little pieces of butter.

Put the Streusel Topping over the apples. The Streusel I recipe makes about twice as much topping as you'll need so use as much or as little as you like.

Bake the pie for 30 minutes. Slip a baking sheet beneath it and bake 30-45 minutes more or until you hear/see the filling bubbling. If you're impatient about your pie, cool for about 1 1/2 hours on a rack if you're intent on serving the pie warm. The original recipe said to wait 3-4 hours for the filling to thicken completely.
