Adzuki Beans, Rice, and Tomatoes

Ingredients

  • 1 small onion(s)
  • 1 clove garlic clove(s)
  • 1 tablespoon olive oil
  • 6 ounces tomato(es)
  • ¼ cup cooked adzuki beans
  • cup cooked brown rice
  • 2 teaspoons soy sauce
  • ½ teaspoon apple cider vinegar
  • teaspoon black pepper
  • teaspoon hot pepper sauce

Method

Chop the onion and garlic. Saute in the oil in a saucepan until beginning to brown. Skin and chop the tomatoes. Add them to the pan and cook for 2-3 minutes longer. Add the drained beans and cooked rice to the pan and cook for a few minutes longer. Add the soy sauce, vinegar, pepper, and Tabasco sauce and stir well before serving.
