Adzuki Bean Spread


  • ¼ cup cooked adzuki beans
  • ½ tablespoon olive oil
  • 2 teaspoons low-sodium soy sauce
  • 3 teaspoons canned tahIni
  • 1 tablespoon parsley


Drain the beans and put them in a bowl. Mash them lightly. Heat the oil in a saucepan. Add the beans, soy sauce, tahini and parsley. Mix well and cook over low heat for 5-7 minutes, stirring occasionally, by which time the mixture should have thickened. Remove from heat. Serve warm on toast.
